A standout on Bourbon Street, Red Fish Grill’s BBQ Oysters aren’t your backyard barbecue fare—they’re New Orleans-style: fire-roasted on the half shell, drenched in spicy garlic-butter barbecue sauce, and paired with a rich, cool blue cheese dipping sauce that cuts the heat with creamy perfection. Here's how to recreate the magic at home using Shelley Farms fresh Gulf oysters.
🔥 BBQ Oysters (Red Fish Grill–Style)

Ingredients:
1 dozen oysters on the half shell
½ cup (1 stick) unsalted butter
2 cloves garlic, minced
2 tbsp Worcestershire sauce
2 tbsp Louisiana hot sauce (like Crystal or Tabasco)
1 tbsp lemon juice
1 tsp smoked paprika
½ tsp cayenne pepper (optional, for extra kick)
Salt and black pepper to taste
Chopped parsley and grated Romano cheese for garnish
Instructions:
Make the BBQ Butter Sauce: In a saucepan over medium heat, melt butter. Stir in garlic, Worcestershire, hot sauce, lemon juice, paprika, cayenne (if using), and a pinch of salt and pepper. Let simmer for 2–3 minutes until fragrant.
Grill the Oysters: Preheat grill to medium-high. Place oysters on the grill (in the shell) and spoon a generous amount of BBQ butter sauce over each one. Grill until the oysters begin to bubble and the edges start to curl, about 4–6 minutes.
Finish & Garnish: Top with a sprinkle of grated Romano cheese and fresh chopped parsley. Remove from grill and serve immediately with toasted French bread and the blue cheese dipping sauce.
🧀 Blue Cheese Dipping Sauce

Ingredients:
½ cup crumbled blue cheese
¼ cup sour cream
¼ cup mayonnaise
1 tbsp lemon juice
1 tbsp buttermilk (optional, for thinner texture)
Salt and cracked black pepper to taste
Instructions:
In a bowl, mash the blue cheese slightly with a fork.
Stir in sour cream, mayo, lemon juice, and buttermilk (if desired).
Season with salt and pepper. Chill for at least 15 minutes before serving for flavors to meld.
Serving Suggestion: Arrange grilled oysters on a platter with a side of the blue cheese sauce for dipping—or drizzle it right over the oysters for the full Red Fish Grill experience. Don’t forget warm French bread for soaking up every last drop of buttery sauce.
